Pistachio

Originally from Syria. It belongs to the genus Pistacia and to the family Anacardiaceae.

Deciduous tree, very branched, with broad crown and a penetrating and superficial root system, pinnate leaves, small flowers and apétalas and the fruit is a drupe monosperma rich in oil. The seed is the edible part and is composed of two bulky cotyledons of green or yellowish green color with reddish tegument.

The crop is widespread, with Iran and the United States being the main producing countries.
