Originally from Syria, Lebanon, Israel and Asia Minor. It belongs to the family Oleaceae and to the genus Olea.
It is a evergreen tree with branched pivotal root, lanceolate, decussate and coriaceous leaves, flowers with four white petals, arranged in inflorescences and the fruit is a drupe of vinous black color when mature and high energetic content.
Olive is the economic base of many regions of the world and Spain and Italy are the main producers worldwide, followed by Greece, Turkey and Tunisia.
