Originally from Europe. It belongs to the Umbelliferae family and to the genus Foeniculum.
Cultivation of up to more than 3 m, forms a rosette from which stands a stem with branches in the form of a pod.
It has leaves with fleshy and interlaced petioles (edible), yellow, white or green flowers and fruit-seeds with a characteristic aroma.
The leaves and stems are eaten as a vegetable, the seeds are used as a seasoning and from their fruits is obtained oil.
The main producers are France, the United States, India and Russia.
