Garlic

A crop originating from Central Asia, its consumption has been known since 3,000 BC. The plant belongs to the Allium genus and to the Amaryllidaceae family. It is a perennial plant with a bulbous root, composed of between 6 and 12 bulbils, which is known as “garlic cloves”. It is a crop with extensive gastronomic and medicinal use.

The largest producer worldwide is China with up to 80% of production. In Europe, Spain heads the list of producers followed by France and Italy.
